Ingredients

6 Yukon Gold potatoes, peeled and thinly sliced

1/2 cup butter

1 small onion, diced

2-3 cups of milk

1 cup shredded cheddar or gruyere cheese

1/2 cup flour

1/2 tsp thyme

1 tbsp parsley

Salt and pepper

Method

In a large saucepan, melt the butter over medium heat.

Add the onion and cook for 5 minutes, until soft.

Add the flour and thyme and cook for 1 minute.

Add 2 cups of milk and bring to a soft boil.

Cook for 6-8 minutes until thickened, stirring frequently.

Add 1/2 cup of cheese, 1/2 tbsp of parsley, salt and pepper to taste, and stir well.

Add the potatoes and stir well.

Transfer potato mixture to a slow cooker greased with cooking spray and top with remaining cheese and parsley.

Cook on low for 6 hours or until tender.

Note: If you like your potatoes to have a thinner sauce, you can add up to another cup of milk to the sauce.
