Ingredients
1 lb elbow macaroni, cooked
2 1/2 cups milk
1/4 flour
3 tbsp butter
2 cloves of garlic, minced
1 small onion, minced
4 cups shredded Mac and Cheese blend cheese
Kosher salt and ground black pepper
Method
Preheat oven to 372 degrees.
In a large pot over medium heat, melt the butter, add the onion, and cook for 4-5 minutes.
Add the garlic and cook an additional 1 minute.
Add the flour and mix well to combine making a roux. simmer for 2 minutes, but don’t let it burn.
Add the milk, bring to a simmer. Salt and pepper to taste and remove from the heat.
Add 3/12 cups of the cheese and stir until melted.
Add the pasta and stir until well coated.
Grease 2 mini muffin pans with cooking spray.
Spoon 2 tbsp of macaroni mixture into each muffin cup, making sure not to over fill.
Sprinkle the remaining 1/2 cup of cheese on top of all of the macaroni filled cups.
Bake until golden and cheese fully melted, 18-20 minutes.
Remove from oven and let cool for about 10 minutes before removing from pans and serving.
