Tender, pillowy gnocchi are tossed with burst cherry tomatoes, fresh Burrata, and aromatic basil, for a light yet satisfying meal. This dish captures the essence of the classic Caprese salad, with the added comfort of gnocchi. It’s a quick and easy vegetarian dinner, a delightful side dish, or a perfect way to showcase fresh garden ingredients.
Note: If you can’t find burrata, a fresh mozzarella ball with work as well.
Ingredients
1lb fresh gnocchi
2 1/2 tbsp butter
16oz grape tomatoes
8oz burrata
Grated Parmesan cheese
Basil leaves
Method
Cook gnocchi according to directions.
Melt butter in a large skillet over medium high heat.
Add grape tomatoes and cook until they start to blister. Salt and pepper to taste.
Add the gnocchi tot he skillet, stir to combine, and saute for 2-3 minutes.
Sprinkle gnocchi with Parmesan and stir.
Transfer gnocchi and tomatoes to a platter, top with cut up burrata and basil leaves, and serve.
