Ingredients

2 medium zucchini

2 eggs

1/2 cup grated Parmesan cheese

2 cups Italian seasoned bread crumbs

3/4 cup flour

Frying oil of choice

Method

Heat 1/2 inch of your frying oil of choice in a deep frying pan over medium heat

Trim zucchini and cut into 1/2 inch thick slices.

Beat eggs in a shallow bowl.

Combine Parmesan cheese and flour in another shallow bowl.

Place flour in a 3rd shallow bowl or spread on a plate.

Coat zucchini slices with flour, then egg, and finally bread crumbs.

Cook zucchini a few at a time for 2-3 minutes per side.

Drain on paper towel lined plate, and serve with warm marinara or sauce of choice.
