Ingredients
1lb fresh gnocchi
1/4 cup butter
4 cloves of garlic, minced
2 pints grape tomatoes
1/4 torn basil leaves
8oz fresh mozzarella, cut into 1/2 inch pieces
2 tbsp olive oil
1/4 tsp crushed red pepper flakes
Method
Heat broiler in oven with rack set 6 inches below.
In an oven safe skillet, heat 1 tbsp of the olive oil over medium high heat.
Add 1/2 of the gnocchi, breaking apart and that are sticking, cover skillet, and cook undisturbed until golden on one side 3-4 minutes.
Transfer to a bowl and repeat with the other 1/2 of gnocchi and olive oil.
Transfer gnocchi to the bowl and add the butter to the skillet.
Add the garlic, crushed red pepper flakes, salt and pepper to taste, reduce heat to medium low, and cook 1-2 minutes.
Add the tomatoes and 3 tbsp of water and cook until tomatoes start to burst, smashing them with back of a spoon to help, about 5 minutes.
Add the gnocchi back into the skillet with the basil and mix well.
Top with the mozzarella and a drizzle of olive oil and place under the broiler until cheese has melted and slightly browned, 2-4 minutes.
Remove from oven and serve.
