Ingredients

1 lb fresh gnocchi

1lb Italian hot or sweet sausage links, sliced thin

1 bunch broccoli rabe, cut into 1 inch pieces

1 sweet onion, chopped

2 cloves of garlic, minced

1/2 cup chicken broth

2 tbsp butter

1/2 tsp crushed red pepper flakes

1/2 cup Parmesan cheese

1/4 cup chopped fresh parsley

fine sea salt and ground black pepper

Method

Cook gnocchi according to directions.

In a large skillet over medium heat, melt the butter, and saute the onion until golden, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the sausage and cook until no longer pink, about 4-5 minutes.

Add the broccoli rabe and chicken broth and bring to a simmer.

Cook until broccoli rabe is wilted and tender, about 5 minutes, salt and pepper to taste.

Add the crushed red pepper flakes, Parmesan, parsley, and gnocchi, and mix well.

Serve with your favorite crusty bread.
