Ingredients
1 1/2 cups 00 flour
1 1/2 cups semolina flour
2 large eggs
4 large egg yolks
1/4 cup chopped parsley
2 tbsp olive oil
2 – 4 tbsp water
Method
Combine the flour, pour onto your countertop or large wooden board and make a well in the center.
Add the eggs, yolks, parsley, and olive oil tot he well.
Beat eggs with a fork and start to incorporate the flour into the eggs.
When dough gets too thick to use the fork, use your hands to start mixing the rest of the flour with the eggs, add ind 1 tbsp of water at a time to help make a smooth dough.
Knead until smooth, about 8-10 minutes.
Wrap tightly in saran wrap and let rest for 2 hours.
Unwrap dough and hand roll / cut or use your favorite dough cutter / extractor.
