Ingredients
1 lb spaghetti
1 lemon, zested
2 clove garlic, minced
1/2 cup heavy cream
5 tbsp butter
1 small chili pepper, sliced thin
2 cups grated Parmesan cheese
Fine sea salt and ground black pepper
Method
Cook pasta to al dente and reserve cups of pasta water.
Meanwhile, add butter to a large pot and melt over medium heat.
Add the garlic and chili and cook for 2 minutes.
Add the lemon zest and heavy cream, salt and pepper to taste, and bring to a simmer.
Add the pasta, Parmesan cheese , and 1 cup of the pasta water to the cream mixture and stir until combined.
If sauce looks too thick, add pasta water 1 tbsp at a time to thin out.
Cup lemon in half and squeeze 1 half into pot, careful with seeds.
Taste and add more lemon from other half in needed.
Transfer to bowls and serve.
