Discover a burst of springtime flavor with our Pea Pesto Crostini. A creamy, sweet pea pesto, blended with aromatic herbs and savory Parmesan cheese, is spread generously on golden, toasted baguette slices. The combination of fresh, vibrant pesto and crisp bread creates a truly delightful appetizer that’s both light and satisfying.
Note: You can top the pea pesto with other topping such as prosciutto.
Ingredients
1 baguette, cut into 1/2 inch slices
2/3 cup olive oil
1 tomato, diced
10oz package of frozen sweet peas, defrosted
1 clove of garlic
1/2 cup grated Parmesan cheese
Fine sea salt and ground black pepper
Method
Preheat oven to 375 degrees.
Line a baking sheet with parchment paper and place baguette slices on baking sheet, drizzle with olive oil, sprinkle with sea salt, and bake until golden, about 15 minutes.
Meanwhile, using a food processor or blender, puree the peas, garlic, Parmesan cheese, and 1/3 cup of the olive oil. Salt and pepper to taste.
Top each baguette slice with a smear of the pea pesto, top with tomatoes, and serve.
