Ingredients
20oz package refrigerated ravioli of choice
28oz can crushed tomatoes
15oz whole milk ricotta
16oz whole milk shredded mozzarella
1 tsp oregano
1/4 cup grated Parmesan cheese
2 cloves of garlic, minced
1 tbsp olive oil
1 large egg
Method
Preheat oven to 350 degrees.
Cook ravioli according to directions.
Heat olive oil in a medium pot over medium heat.
Add the garlic and cook for 1 minute.
Add the tomatoes and oregano, and cook for 10 minutes on low heat, until thickened.
Remove from heat.
In a medium bowl, combine the ricotta, egg, and Parmesan and stir until smooth.
Add 1/4 cup of sauce to the bottom of an 8 inch round or oval backing dish.
Top with half of the ravioli, all of the ricotta mixture, half of the remaining sauce, and then half of the mozzarella cheese.
Top with remaining ravioli, sauce, and then mozzarella cheese.
Cover with foil and bake for 40 minutes, until bubbly. Uncover and cook for additional 10 minutes or until mozzarella is browned to your liking.
Let cool for 5 minutes before spooning and serving.
