Indulge in a taste of Vietnam with these vibrant Chicken Rice Paper Roll-Ups. Thin, translucent rice paper wrappers embrace a medley of succulent shredded or sliced chicken and fragrant herbs like mint and cilantro. Served hot from the air fryer with a delicious dipping sauce, they’re a nutritious and flavorful choice for any occasion – from a light summer lunch to a crowd-pleasing appetizer.
Note: Feel free to add carrots, cucumber, or whatever veggies you like to the chicken wraps.
Ingredients
2 boneless skinless chicken breasts
12 8 1/2 inch round rice papers
1 scallion, sliced
kosher salt and ground black pepper
2 tbsp cilantro leaves
Red or green chile, sliced
Sweet Thai sauce
Method
Line a baking sheet with parchment paper.
Preheat your air fryer to 400 degrees.
Slice each chicken breast into 6 equal pieces lengthwise and season with salt and pepper to taste.
Soak a rice paper in a bowl of warm water until pliable, 10-15 seconds.
Place 1 slice of chicken in middle of wrapper and add vegetables if using.
Fold top and bottom of wrapper over chicken and roll up into a tight log and place on the baking sheet.
Repeat with remaining 11 wrappers.
Place wrappers in basket of air fryer 4-6 at a time to avoid crowding and cook for 15 minutes until golden brown or until chicken is cooked through.
Serve with cilantro, sweet Thai sauce, scallions, chile, ect.
