Ingredients

1 lb bulk sausage, sweet or hot

4 cloves garlic, minced

1/2 cup dry white wine

1 onion, diced

1 8oz package cream cheese, softened

1 6oz bag fresh baby spinach

1 15oz can cannellini beans, drained

1 cup chopped tomatoes

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 tsp oregano

1/2 tsp thyme

Method

Preheat oven to 375 degrees.

In a large skillet over medium heat cook the sausage, breaking up as you go, until no longer pink with the onion and garlic.

Drain the sausage mixture if needed.

Add the wine, oregano and thyme, and cook until evaporated.

Add the cream cheese and combine until incorporated.

Add the spinach, beans, and tomatoes. Cook while stirring until spinach wilts, about 3-5 minutes.

Transfer mixture to a greased 8×8 casserole dish and top with the cheeses, mozzarella first.

Bake until bubbly, about 22025 minutes.

Serve with crackers, sliced baguette, or veggies.
