Bacon, Broccoli, and Cheddar Roll-Ups are the ultimate comfort snack that combines savory, cheesy goodness with the green crunchiness of broccoli. Imagine buttery crescents wrapped around crispy bacon bits and blanched broccoli florets, all oozing with melty cheddar cheese—it’s like a fun twist on a classic calzone! The best part? They’re super easy to whip up for a quick weeknight dinner or party appetizer. Just sauté some chopped broccoli until it’s tender yet still vibrant, mix in crispy bacon (because let’s be real, everything’s better with bacon), and add shredded cheddar for that ideal stretch. Slather on a bit of your favorite sauce if you’re feeling saucy, roll it all up tight, and bake them until golden brown. Serve alongside ranch or apple cider vinegar for dipping—trust me; they’re bound to be a hit at any gathering!

Ingredients

1 lb bacon

1 head broccoli, stalks removed, florets chopped

1 cup shredded cheddar cheese

1 tube crescent rolls or sheet

Kosher salt

Ground black pepper

Method

Preheat oven to 350 degrees.

Roll out crescent rolls and pinch into one long rectangular sheet.

Chop bacon and cook in a large skillet until crisp, about 7 minutes. Transfer to a paper towel lined plate.

Pour off all but 2 Tbsp of the bacon fat.

Add broccoli and cook until tender, about 7 minutes.

Cover crescent roll rectangle with the shredded cheddar.

Top cheese with broccoli and bacon.

Season with salt and pepper to taste.

Roll up tightly from the wide end so you have a long log.

Cut into 16 pieces, place on a baking sheet lined with parchment paper or coated with cooking spray and bake until golden, about 12-15 minutes.

Serve warm.
