Ingredients

1 lb spinach

1/3 cup minced onion

1/4 cup diced celery

1/2 diced carrot

1 tbsp butter

1 cup peeled and cut up San Marzano tomatoes with juices

1/2 cup parmesan

Salt and pepper

Method

Trim away stems from the spinach, rinse well, and coarsely chop.

Add the olive oil to a large skillet and turn heat to medium.

Add the onion and cook until translucent.

Add the celery and carrot and saute for 3 minutes, until softened.

Add the spinach in batches and salt and pepper to taste.

Once all the spinach has become limp, turn the heat to high and once all the liquid in the pan has evaporated add the butter and saute for 10 minutes, stirring often.

Add the tomatoes and lower the heat to a simmer and cook for another 10 minutes.

Toss with pasta of choice, add the Parmesan, and serve.
