Ingredients

2 large red bell peppers

1/4 bacon cut into strips

1.2 whole leaf parsley, no stems

1 tbsp olive oil

1 tbsp butter

2 tbsp minced garlic

grated parmesan

salt

Method

Cut peppers in half, core and seed them.

Using a potato peeler, skin the peppers and then cut them into 1/2 inch pieces.

In a large skillet heat the butter and olive oil over medium heat, add the garlic and cook until just turning translucent. It’s important to not overcook the garlic or it will burn in the last step.

Add the parsley, salt to taste, then add the bacon strips. Cook for 3 minutes then raise heat to medium-high.

Add the peppers and cook for 10 minutes until tender.

Toss with pasta of choice and parmesan.
