Ingredients

1 1/2 cup graham cracker crumbs

3 tbsp sugar

5 1/2 tbsp butter, melted

3 oz packages of cream cheese

1 cup of sugar

3 large eggs

1 tsp vanilla extract

1 21oz can of blueberry pie filling

Method

Preheat oven to 375 degrees.

In a medium bowl combine the graham cracker crumbs, 3 tbsp sugar, and melted butter and mix well.

Press mixture into the bottom of a 9-inch springform pan, coming up the sides as well.

Using an electric mixer or stand mixer, whip the cream cheese until very soft.

Add the 1 cup sugar and mix well.

Add the eggs one at a time and mix well after each.

Add the vanilla extract and mix well.

Pour 1/2 of the batter into the pan.

Spoon the blueberry pie filling onto the batter in a ring pattern, about 1 inch from the edge, and leaving a 3-inch diameter circle in the middle of the batter.

Top with remaining batter.

Bake in the middle of the oven for 35-40 minutes or until the top looks set.

Cool completely on a wire rack, then cover and chill at least 4 hours before serving.

Note: You can use any pie filling of your choice.
