Ingredients

1 lb thin pasta, spaghetti or angel hair

2 tsp cracked black pepper

1 3/4 cup grated pecorino romano cheese

Method

Cook pasta in salted water till al dente.

Add pepper and saute for 1-2 minutes.

Add 1 cup of pasta water to the skillet, then drain pasta, reserving another 1/2 cup of water.

Transfer pasta to the skillet and mix with the pepper sauce.

Add 1 1/2 cups of the cheese mix well so the cheese becomes creamy, adheres to the pasta and no clumps remain. Add more pasta water, 1 tbsp at a time if necessary.

Transfer pasta to plates, top with remaining cheese, and serve.
