Ingredients

400g 00 flour

100g Semolina flour

300g Warm water

14g Fine sea salt

7g Active dried yeast

Olive oil

Kosher salt

Cherry tomatoes, sliced

2 Large red onions, thinly sliced

Method

Add salt to a large zip lock container, add warm water, stir to dissolve and then add yeast and let set a couple minutes to hydrate.

Add flour and mix until it forms a ball. Put ball on a lightly floured surface and knead for 5 minutes until smooth and elastic.

Coat container lightly with olive oil, place dough in the container, cover and let rise in a warm place for a half an hour or until doubled in size.

While dough rises, heat 2 tablespoons of olive oil in a pan, add onions, and cook on low heat for about 5 minutes. Let cool.

Preheat oven to 425 degrees.

lightly oil a baking sheet with olive oil, punch dough down, and then spread the dough in the baking sheet so it stretches to all sides.

Drizzle with olive oil, using your fingers push into the dough making plenty of dimples.

Sprinkle top with some kosher salt and then top with onion and sliced tomatoes.

Let rest for about 20 minutes then bake for 20 minutes until golden on top.

Take out of oven and transfer to a cutting board, slice, and serve warm or at room temperature.
