Ingredients

2 boneless skinless chicken breast halves

1/2 cup baby spinach, chopped

1/4 cup shredded mozzarella cheese

1 tbsp butter

1/4 cup seasoned bread crumbs

1 tsp minced garlic

1 cup dry white wine

1 cup chicken broth

2 tbsp lemon juice (optional)

salt & pepper

1 tbsp butter

1 tsp flour

1/4 cup parsley, chopped

Method

Preheat oven to 375 degrees.

Flatten chicken breast to 1/4 inch thickness.

layer with the spinach and mozzarella.

Roll up and secure with toothpicks.

Melt butter on small plate. Place bread crumbs on another plate.

Roll chicken in butter and then coat with bread crumbs.

Coat an 8 inch baking dish with cooking spray, place chicken seam side down in dish, and bake for 30-35 minutes or until chicken cooked through.

While chicken is baking combine wine and broth in a small sauce pan and bring to a boil. If using lemon juice, add it now.

Cook over medium heat until reduced by a 1/3.

Combine butter and flour and add to liquid. Whisk until combined.

Add the parsley, and salt and pepper to taste.

Slice chicken into 1 inch rounds, drizzle with sauce and serve.
