Ingredients

6 bone-in chicken thighs

small red onion, chopped

8 oz olives

2 oz capers

16 oz artichoke hearts

1/4 cup white wine

1 tsp oregano

2 cloves of garlic, chopped

1 lemon, sliced, seeds removed

3 cups chicken broth

2 tbsp olive oil

Method

In a large skillet heat the olive oil over medium heat and brown chicken thighs for 6-7 minutes per side.

Remove chicken with a slotted spoon to a large plate.

Add the onion, garlic, and capers and saute for 5 minutes.

Add the lemon and white wine and simmer for 5 minutes.

Add the chicken broth and chicken thighs and simmer for 10 minutes.

Add the artichokes and olives and simmer for 10 minutes.

Serve chicken with sauce on the side.
