Ingredients

Crust

24 Oreo cookies, crushed

6 tbsp butter, melted

Filling

32oz cream cheese, softened

3/4 cup sugar

1/2 cups light brown sugar

1/4 cocoa powder

4 large eggs

9oz semisweet chocolate, chopped

Granache

1 1/2 cups chocolate chips

3/4 cup heavy cream

Method

Preheat oven to 350 degrees.

Coat a 9 inch spring form pan with cooking spray.

Combine crushed Oreos with melted butter in a bowl until well moistened.

Press Oreo mixture into spring form pan and press 1/3 of the way up the sides.

In a large bowl with a mixer or in a stand mix combine the cream cheese and sugars and mix until smooth.

Add cocoa powder and mix on low until incorporated.

Add eggs one at a time and mix for 20 seconds after each egg.

Melt 9oz of chocolate in the microwave stirring occasionally until melted, add to cream cheese mixture and mix until incorporated.

Bake for 1 hour, shut oven off, and let sit in oven for another 30-60 minutes WITHOUT opening door. When top starts to crack cheesecake is done. Remove from oven and let cool.

Refrigerate cheesecake for at least 4 hours.

When ready to serve, place chocolate chips in a small bowl. Heat heavy cream in a saucepan until just starts to bubble.

pour cream over chocolate chips and stir until smooth.

Pour over top of cheesecake and return to the refrigerator for 10-15 minutes to set.

Slice and serve.
