Ingredients

3 large eggs

4 oz bacon, ham, or sausage

1/4 cup sliced jalapenos

1 1/2 tbsp butter

2 tbsp olive oil

2 tbsp cilantro

1/2 cup shredded Monterey Jack cheese

salt and pepper

1 or 2 12 inch flour tortillas

Method

Heat a skillet over high heat.

Add the olive oil and your choice of meat and cook until browned.

Add the jalapenos and remove from heat.

Melt butter in another skillet over medium heat.

In a medium bowl, whisk the eggs with the cilantro and salt and pepper to taste until frothy.

Pour eggs into the pan and cook, stirring often, until almost set.

Top eggs with the meat / jalapeno mixture and the cheese.

Once fully set, fold the eggs into thirds like a letter and transfer to a cutting board.

Depending on how full you want your burrito, either place entire omelet in 1 shell, or cut in half and place in 2 shells.
