This cheesecake celebrates chocolate in every delicious layer. It has a rich, buttery chocolate cookie crust, a smooth and intensely chocolatey cheesecake filling, and an optional luscious chocolate ganache topping. It’s ideal for holidays, birthdays, or any occasion that calls for a serious dose of deliciousness.

Ingredients

Crust

1 1/4 cups chocolate graham cracker crumbs

2 tbsp sugar

3 tbsp butter, melted

Filling

24oz cream cheese softened

3/4 cup sugar

3 large eggs

1/2 cup cocoa powder

2 tbsp flour

2 tsp vanilla extract

2oz semisweet chocolate, chopped

Method

Preheat oven to 350 degrees.

Coat a 9 inch spring form pan with cooing spray.

Mix the crust ingredients in a medium bowl until moistened.

Press crust mixture into the spring form pan.

Place cream cheese in bowl of stand mixer or a bowl to use hand mixers with and beat until smooth.

Add sugar and beat until smooth.

Add cocoa, flour, and vanilla extract and beat on low until incorporated.

Add eggs one at a time and beat for 20 seconds after each egg.

Melt chocolate in microwave.

Add chocolate to mixture and beat until just combined.

Pour mixture over the chocolate crust and bake for 1 hour.

Shut off the oven and let sit in the oven for another hour WITHOUT opening the door.

Remove from oven, cool completely, and then refrigerate for at least 6 hours.

Let stand at room temperature for about an hour before slicing.
