Note: Tomatoes or peppers are also nice to add.

Ingredients

1lb fresh gnocchi

1 lb hot or sweet Italian sausage

2 cups frozen sweet peas

1/2 grated Parmesan cheese

1/2 torn basil leaves

3 tbsp olive oil

Method

In a large skillet heat 1 tbsp of olive oil over medium high heat.

Add the gnocchi, breaking apart any that are sticking, cover and cook undisturbed for 2-3 minutes, don’t let burn.

Uncover gnocchi and cook an additional 2-3 minutes while stirring to crisp both sides, adding olive oil if skillet gets too dry.

Transfer gnocchi to a bowl.

Add 1 tbsp olive oil and sausage to skill and cook until no longer pink, stirring occasionally, about 8 minutes.

Add the peas and 1/2 cup of water to the skillet and cook for 3-4 minutes.

Add the gnocchi, Parmesan, and basil leaves to the skillet, and mix well.

Transfer to a large platter and serve.
