Ingredients

1 lb firm white mushrooms

2 large eggs

olive oil

1 1/2 cups bread crumbs, unflavored or Italian

salt

pepper

Method

Wash and dry the mushrooms, then slice into 3/4 inch thick pieces.

Break eggs into a bowl, Add salt and pepper to taste, and whisk until smooth.

Spread bread crumbs onto a plate.

Dip mushroom slices into egg and then coat with bread crumbs.

Pour enough olive oil into a pan to come up 1/2 inch. Heat over medium high heat.

When oil is hot enough, add the mushroom slices in small batches so as to not overcrowd the pan.

Cook until golden and crusty then flip and repeat.

Use a slotted spoon to transfer to a paper towel lined plate to drain and cool.

Repeat with remaining mushrooms.

Sprinkle with salt and serve.
