Ingredients
1lb fresh gnocchi
15oz can cannellini beans, drained and rinsed
14oz can diced tomatoes
6oz fresh spinach
1/2 cup shredded mozzarella cheese
3 tbsp Parmesan cheese
1 onion, chopped
2 cloves of garlic, minced
1 tbsp olive oil
Method
In a large skillet over medium high heat, saute the onion in the olive oil until golden, about 5 minutes.
Add garlic and cook an additional 1 minute.
Add gnocchi and cook for 5-6 minutes.
Stir in beans,tomatoes, spinach, and heat cook for 2-3 minutes.
Top with the cheeses and let stand, covered, OFF of the heat, for 4-5 minutes until mozzarella melts.
Serve immediately.
