Ingredients

6 medium-sized round ripe tomatoes

1/2 cup cooked ham, chopped

12 olives, pitted and chopped

2/3 cup grated parmesan

1/4 cup onion, diced

2 tbsp parsley

4 tbsp olive oil

salt and pepper

2 tbsp Italian bread crumbs

Method

Preheat the oven to 400 degrees and set the rack to upper 1/3 of the oven.

Cut tomatoes in half, remove seeds, and place on a baking sheet, cut side up.

In a bowl combine the ham, onion, olives, parmesan, parsley, olive oil, and salt and pepper to taste.

Stuff the tomato halves with the ham mixture and top with the Italian bread crumbs.
