Note: If you can’t find mascarpone cheese, you can use heavy cream instead.

Ingredients

8 oz lasagna noodles broken into pieces

16 oz ground beef

8 oz sweet or hot Italian sausage

1 onion, diced

4 tsp minced garlic

1 tsp oregano

2 tbsp olive oil

32 oz chicken broth

28 oz can of San Marzano tomatoes, crushed

16 oz can of Italian pureed tomatoes

8 oz whole mile ricotta

1/3 cup of mascarpone cheese

Method

Bring a pot of salted water to a boil and cook the noodles for 5 minutes, they will still be very firm.

In a large pot heat the olive oil over medium-high heat and cook the beef and sausage until no longer pink. Drain the meats if there is too much grease.

Add the onion, garlic, oregano, salt and pepper to taste, and cook until onion is softened, about 5 minutes.

Add the chicken broth, crushed San Marzano tomatoes with their juices, tomato puree, and cook for 15-20 minutes.

Add the noodles and cook for an additional 3-4 minutes.

In a medium bowl combine the ricotta, Parmesan, and mascarpone cheeses.

Spoon soup into large bowls, top with a dollop of the cheese mixture, and serve.
