One Skillet Roasted Sesame Chicken is a simple yet flavorful dish that combines the rich taste of roasted chicken with the nutty aroma of sesame seeds. This recipe is perfect for anyone looking for a quick and easy weeknight dinner option. Ingredients

6 bone-in skin-on chicken thighs

1 lb baby carrots

1 tbsp honey

2 tbsp soy sauce

sesame seeds

2 tbsp Sriracha

2 tbsp rice vinegar

1 inch piece of ginger

3 scallions

2 tbsp sesame oil

Method

Preheat oven to 425 degrees.

In a large oven safe skillet, add 1 tbsp of oil, and cook the chicken skin side down over medium heat for 10 minutes.

Transfer chicken to a plate and pour off all but 2 tbsp of the fat from the skillet.

Increase heat to medium high and add the carrots, cooking without stirring for 5 minutes.

Turn carrots and cook an additional 2 minutes then transfer to oven and bake until tender, about 10 minutes.

Combine soy sauce, Sriracha, 1 tbsp rice vinegar, 1 tbsp oil, and honey in a small bowl.

Grate ginger into the bowl and mix well.

Remove skillet from oven, arrange chicken on top of carrots, and pour sauce over top.

Return to oven and roast until chicken is cooked through, 165 degrees internal temperature, about 15-18 minutes.

Remove from oven and let rest for 10 minutes.

Slice scallions very thin.

Transfer chicken and carrots to a platter, pour sauce from skillet over top, top with scallions and sesame seeds.
