Ingredients

6 Yukon gold potatoes, cut into 3/4 inch cubes

5 cloves of minced garlic

1/4 cup olive oil

1 tsp thyme

kosher salt and black pepper

Method

Preheat your oven to 400 degrees.

In a bowl, toss the potatoes with the olive oil, garlic, and thyme. Add salt and pepper to taste.

Spread potatoes on a baking sheet and roast for 50-60 minutes, tossing them halfway through, until crisp and golden.

Remove from oven, transfer to bowl and serve.

Note: you may have excess olive oil in the pan. I like to drizzle it on steak if that is what we are having. If you find it is too much oil, simply decrease the amount.
