Ingredients

1 baguette, cut into 1/2 slices

16 oz jar of roasted red peppers

6 oz log of goat cheese

1 shallot, minced

1 1/2 tbsp balsamic vinegar

1 tbsp honey

olive oil

crushed red pepper flakes

2 tsp thyme

2 tbsp parsley

fine sea salt and black pepper

Method

Preheat your oven to 400 degrees.

Brush top of each slice of baguette with olive oil, season with salt and pepper, and place on a baking sheet.

Bake in the oven until golden, about 7 minutes.

In a small bowl whisk together the honey, vinegar, 3 tbsp of olive oil, thyme, shallots, roasted red peppers, parsley, and crushed red pepper flakes to taste. We add about a 1/4 of a tsp but it depends on how spicy you’d like it.

Set mixture in the refrigerator to chill until bread has cooled.

When ready to serve, spread a thin layer of goat cheese on each slice of bread and then top with the pepper mixture.

You may drizzle with balsamic glaze if desired.
