2 cups heavy cream

3 oz grated Gruyere cheese

2 oz grated Parmesan

1 tbsp thyme

2 cloves garlic, minced

2 tbsp butter

salt

black pepper

Method

Preheat oven to 400 degrees with rack in the center.

Combine cheese in a large bowl and then set 1/3 of cheese aside.

Add cream, garlic, and thyme to the cheese in the large bowl.

Salt and pepper to taste.

Add potato slices and toss to coat well.

Grease a casserole dish that will fit all of the potatoes with butter.

Stack potatoes and set in dish standing up on their sides around outside of dish first, then into the middle. Potatoes should be tightly packed.

If needed, slice more potatoes and coat with cheese mixture to make sure they are tightly packed into your casserole dish.

Pour remaining cheese mixture into dish until it comes halfway up the potatoes. You may not need all of the mixture.

Cover dish tightly with foil and bake for 30 minutes.

Uncover and bake an additional 30 minutes.

Remove from oven, top with the reserved cheese, return to oven, and bake an additional 30 minutes.

Remove from oven, let rest a few minutes, and serve.
