Ingredients

2 thin boneless, skinless, chicken breasts

2 hot Italian sausages

1 tbsp flour

1 tbsp olive oil

4 Cloves of chopped garlic

salt and pepper

1 small onion, chopped

8 oz slice mushrooms

1 bell pepper seeded and diced

1 chili pepper, seeded and diced

1/2 cup white wine

1/2 cup chicken broth

1 1/2 tbsp tomato paste

1/2 tsp oregano, plus extra

Method

Preheat oven to 375 degrees.

Heat olive oil in a large oven-safe skillet over medium heat, add garlic and cook for 1 minute.

Season chicken with oregano, salt, and pepper, and coat lightly with flour.

Add chicken and sausage and cook until no longer pink, about 5-6 minutes.

Transfer chicken and sausage to a plate and add bell peppers and mushrooms to the skillet. Cook for 3-5 minutes, then transfer to a plate.

Add the chili pepper to the skillet and saute until fragrant.

Add the wine, chicken broth, oregano, and tomato paste and stir until smooth.

Once the sauce starts to simmer, add chicken, sausage, mushrooms, and bell peppers, back to the skillet and stir so the sauce covers the chicken.

Bake in the oven for 15-20 minutes, remove and serve.
