Ingredients

4 thin boneless, skinless, chicken breasts

1 1/2 tbsp olive oil

1/2 cup minced onion

3 cloves of minced garlic

1 28oz can of San Marzano tomatoes, chopped with puree

1/4 cup sliced black olives

1 tsp oregano

1 tbsp capers

1 chili pepper, seeded and chopped

1 anchovy fillet, chopped

Method

Add 1 tbsp olive oil to a large skillet and heat over medium-high heat.

Add chicken and cook for 2-3 minutes per side, until juices run clear.

Remove chicken to a plate and add 1/2 tbsp olive oil, garlic, and the onion to the skillet.

Saute for about 2 minutes and then add the tomatoes, capers, pepper, oregano, olives, and anchovy.

Bring to a slow simmer and cook for 10-12 minutes, until sauce is slightly thickened.

Pour sauce over chicken and serve, with or without pasta.
