Pasta dough is a staple ingredient in many Italian dishes, and it is surprisingly easy to make. The dough consists of just a two simple ingredients: flour and eggs. In this dough we’ll be adding cooked, chopped spinach. Pasta dough is a versatile and delicious ingredient that can be used to make a variety of dishes. With a few simple ingredients and a bit of kneading, you can make a delicious pasta dough that will be sure to impress your family and friends.

Ingredients

225g 00 Flour

75g semolina flour

2 large eggs

170g baby spinach leaves, stems removed

Method

In a small pot, bring water to a boil, and add spinach and cook until wilted and very soft but still very colorful.

Drain and rinse well under cold water.

Squeeze water from the spinach and then chop until very fine.

Place spinach in a bowl, add eggs and mix well.

Mix the flour and then mound it in the center of a large wooden board or on your counter, making a well in the center.

Add egg mixture to the center of the flour and using a fork start to mix the flour into the eggs.

When the dough starts to come together, about 1/2 the flour is incorporated, it is time to start kneading it. Wet your hands and start to mix the rest of the flour into the dough. Keep using dough to scrape up bits of flour on the counter.

Once you have all the flour incorporated, knead the dough ball for about 10 minutes. If it is too sticky, you can dust the board/counter with some extra 00 flour. The dough should be elastic and a little sticky when you’re done kneading it.

Wrap the dough ball in plastic wrap and let sit for 30-60 minutes before cutting it into your pasta.
