Ingredients

2 cups sugar

1/3 cup water

3 tbsp light corn syrup

3 sticks butter

1/4 cup cocoa powder

1 cup blanched almonds, chopped

Method

Line a sheet pan, with sides, with a silicone mat or oil well.

In a medium pot, ad the sugar and water and stir to combine.

Add the corn syrup and butter and and bring to a boil.

Boil until mixture reaches 300 degrees on a candy thermometer.

Remove from heat, stir in the cocoa and nuts, and IMMEDIATELY pour onto your lined / oiled baking sheet. It will spread out on its own.

Set aside to cool and harden.

Once completely cooled, break into chunks and store in an airtight container.
