These cream cheese filled mini peppers are a vibrant, flavorful, and incredibly easy appetizer or snack. Sweet mini bell peppers are halved and filled with a creamy, savory mixture, typically including softened cream cheese, shredded cheese like cheddar or mozzarella, and seasonings such as garlic powder, onion powder, and chives. Some variations add ingredients like cooked bacon bits, jalapeños for a spicy kick, or horseradish for a zesty flavor.
The beauty of this dish lies in its versatility. They can be served raw for a crisp and fresh bite, or baked in the oven or air fryer until the peppers soften and the cheese becomes warm and bubbly. They are naturally low in carbohydrates and gluten-free, making them suitable for a variety of dietary needs. Whether enjoyed hot or cold, these colorful bites are a perfect addition to parties, game days, charcuterie boards, or even as a healthy mid-day snack, offering a delightful contrast of textures and flavors in each bite.
Note: This recipe is for the cream cheese base. As stated above you can add whatever spices or add-ins that you like. I prefer to add crumbled bacon, dill weed, and/or garlic.
