Ingredients

8 large eggs, beaten

3 cups baby spinach, chopped

8 slices bacon, chopped

1/4 cup half and half

1/2 cup thinly sliced onion

1/2 tsp minced garlic

salt and pepper

1 cup grape tomatoes, sliced

2/3 cup cheddar cheese

Method

Preheat oven to 350 degrees.

Butter a 9 inch pie pan and set aside

Cook bacon, over medium high heat, until crisp in a large skillet and transfer to paper towel lined plate.

Saute onion until soft in the bacon drippings, about 5 minutes.

Add spinach and cook until wilted, about 1 minute.

In a large bowl combine the eggs, half and half, garlic, onion, bacon, spinach, tomatoes, and cheese. Salt and pepper to taste.

Pour into prepared pie pan and bake for 30 to 35 minutes.

Remove from oven slice and serve.
