Ingredients

8 eggs, beaten

1/4 roasted red peppers

4 cups baby arugula

4 slices prosciutto, cut into strips

1/2 tbsp olive oil

1 clove of minced garlic

salt and pepper

1/2 cup crumbled feta or goat cheese

Method

Preheat your broiler and heat olive oil in a large oven proof skillet over medium low heat.

Add roasted red peppers and garlic and saute for 1 minute.

Add arugula and cook until wilted, about 2 minutes.

Add the prosciutto and pour the eggs over top.

Salt and pepper the eggs to taste and add the crumbled cheese.

Cook for 5 to 6 minutes, until mostly set.

Place 6 inches from broiler and cook for 3 minutes or until set and browned.

Remove from oven, cool slightly, slice and serve.
