Ingredients

1 28oz can San Marzano Tomatoes

1/4 cup extra virgin olive oil

7 clove of garlic, sliced very thin, or minced

red pepper flakes or dried pepperoncini

1tsp kosher salt

dried oregano

Method

Pour tomatoes into a large bowl and crush them with your hands into chunks.

Pour 1 cup of water into can and stir to get reserved juices.

In a large skillet heat the olive oil until hot and then add the garlic.

As soon as the garlic starts to cook, but not brown, add the tomatoes and water from the can. Add salt, and the oregano and red pepper / pepperoncini to taste. Stir well.

Simmer sauce until thickened, about 15 minutes, and oil rises to the surface. Test sauce after 10 minutes to see if you need to add more salt, oregano, or red pepper/pepperoncini.
