This One Pan Garlic Ranch Chicken & Vegetables recipe is a delicious and easy-to-make dish that is perfect for busy weeknight dinners. This recipe combines juicy chicken thighs with potatoes and carrots , all cooked together on one pan for easy cleanup. The star of this dish is the flavorful garlic and ranch seasoning, which adds a tangy and herbaceous taste to the chicken and vegetables.

Note: You can add other root vegetables if you’d like. I always add some sliced onion.

Ingredients

8 bone-in skin-on chicken thighs

2 cups baby red potatoes, halved

2 cups baby carrots

8 tsp brown sugar

2 tbsp olive oil

1 package hidden valley ranch dressing mix

3 cloves of garlic, minced

kosher salt and black pepper

2 tbsp parsley

Method

Preheat oven to 400 degrees.

Rub each chicken thigh with 1 tsp of brown sugar.

Lightly oil a rimmed baking sheet or coat with cooking spray.

Place chicken and vegetables in a single layer onto the baking sheet.

Drizzle with olive oil and then sprinkle with ranch dressing.

Spread garlic on top and salt and pepper to taste.

Bake until golden brown and baked through, with internal temperature of 165 degrees ,about 25-30 minutes.

Broil for 2-3 minutes to crisp the skin then serve hot.
