Ingredients

1 lb boneless skinless chicken breasts

8 oz fresh mozzarella, sliced

1 cup flour

1 cup panko bread crumbs

3 eggs, beaten

kosher salt and black pepper

1 tsp oregano

1/2 tsp garlic powder

1/2 cup grated Parmesan

2 cup marinara

olive oil

Method

Preheat oven to 400 degrees.

Cut a slit into the side of each chicken breast, stuff with mozzarella slice(s), and pinch closed. You can toothpick then shut if desired after breading.

Season with salt and pepper.

Put eggs, flour, and panko into 3 separate shallow bowls.

Add the garlic powder, oregano, 1/2 tsp salt, and 1/4 of the Parmesan to the panko and mix well.

Dip chicken in flour, shaking off excess, then egg, fully coating, then bread crumb mixture, making sure to coat entirely.

In a large oven safe skillet, heat a thin layer of olive oil until hot.

Cook chicken until golden, 4 minutes per side.

Pour marinara around chicken and sprinkle with remaining Parmesan.

Transfer skillet to the oven and bake for 20 minutes.
