Ingredients

4 large boneless, skinless chicken breasts

1 small onion, chopped

2 stalks celery, sliced

2 chipotle chilis, chopped

4 cups chicken broth

15 oz black beans, drained

15 oz corn, drained

28 oz diced tomatoes with juices

3 gloves garlic, minced

1 tsp chili powder

Method

Add everything to the slow cooker except chicken and mix well.

Place the chicken breasts on top of the soup.

Cook on low for 8 hours or until chicken is cooked through and falling apart.

Spoon out chicken and shred with 2 forks or a hand mixer.

Add chicken back to the slow cooker and stir to combine with the soup.

Salt and pepper to taste and serve.

Note: You can add diced jalapeno peppers to add heat to the soup.
