Slow Cooker Pork Shoulder with Zesty Pesto Sauce is a delicious and flavorful dish that is perfect for any occasion. Ingredients

1 6 lb Boston butt shoulder roast

1/4 olive oil

3 tbsp brown mustard

3 tbsp brown sugar

2 tbsp kosher salt

2 tsp black pepper

2 tsp oregano

1 1/2 tsp paprika

8 cloves of garlic, minced

1 1/2 cups pesto

1 tsp red pepper flakes

1/2 cup lemon juice

Method

In a small bowl combine the olive oil, mustard, brown sugar, salt, pepper, oregano, garlic and paprika. Mix well.

Rub mixture over entire pork roast then place in your slow cooker.

Cook pork on low 7-8 hours or until tender. You don’t want it falling apart like pulled pork.

Transfer pork to a cutting board and let rest at least 5 minutes.

In a small bowl combine the pesto, lemon juice, and red pepper flakes.

Slice pork and transfer to a platter.

Drizzle with pesto sauce and serve.
