Ingredients

1lb spaghetti

1/4lb slab bacon, chopped

2 large eggs

1 cup pecorino

Method

Bring a pot of salted water to a boil.

Heat a skillet over medium-high heat and cook the bacon until golden, about 7-9 minutes.

Cook the pasta until al dente, reserve 1/2 cup of the pasta water, drain pasta and add to bowl.

In a medium bowl whisk together the eggs and pecorino.

Add the egg/cheese mixture to the pasta and toss well to coat. Add pasta water to thin out the sauce to desired consistency.

Serve hot with some crusty bread.
