Ingredients

9 oz refrigerated or frozen tortellini

6 cups vegetable broth

1 carrot, thinly sliced

1 small zucchini, chopped

1 small bunch Swiss chard, leaves only

1/2 cup frozen sweet baby peas

6 cloves of garlic, sliced

1/4 cup olive oil

Method

In a large soup pot heat the olive oil over medium heat.

Add the garlic and cook until softened, about 4-5 minutes.

Add the vegetable stock and carrots and simmer until softened, about 8-10 minutes.

Add the zucchini and tortellini and cook until the past is al dente.

Add the Swiss chard and peas and cook an additional 4 minutes.

Season with salt and pepper if necessary, and serve.
