Ingredients

1 lb of mixed, cured, pitted, Italian olives

1/4 cup olive oil

Strips of zest from 1 lemon

1 sprig of fresh thyme

2 thinly sliced cloves of garlic

Method

In a medium saucepan, heat the olive oil, garlic, thyme, and lemon zest strips until the garlic just begins to turn color, about 5 minutes.

Remove from heat, add olives , and let stand for 10-15 minutes.

Transfer to a bowl and serve.
