Ingredients

Crepe Batter

1 cup milk

1/4 cup cold water

1 cup flour

2 eggs

1 tbsp sugar

1/8 tsp salt

3 tbsp butter, melted

Cheese Filling

1 1/2 cups ricotta cheese

4 oz cream cheese

3 tbsp confectioner’s sugar

1 egg

1 tbsp lemon zest

Blueberry Sauce

2 pints blueberries

3/4 cup sugar

2 tbsp butter

1 tbsp corn starch

Method

In the bowl of a stand mixer with the whisk attachment add all of the crepe batter ingredients and mix on medium speed for 1 minutes, until very smooth.

Transfer to a bowl, cover, and refrigerate for 1 hour.

Clean out stand mixer bowl and then add all of the cheese filling ingredients and whisk on medium speed until smooth.

Put the bowl in the refrigerator until ready to use.

In a medium pot, add all of the blueberry filling ingredients and cook over medium high heat until mixture comes to a boil.

Stir blueberries until broken down and sauce is a little chunky. Let cool.

Brush a medium skillet over medium heat with melted butter and add 1/4 cup of crepe batter.

Swirl skillet so batter covers entire bottom.

Cook for 30-40 seconds until just set.

Gently flip crepe and cook another 30 seconds.

Transfer to a plate and repeat with remaining batter.

Preheat oven to 400 degrees.

To make the blintzes, spoon 1/4 cup of cheese filling on bottom third of crepe. Roll up like a burrito, tucking in the ends.

Heat a large oven proof skillet over medium heat.

Brush skillet with melted butter and fry the blintzes for 2 minutes on each side.

Transfer skill to oven and bake for 10 minutes.

Remove from oven, transfer to plates, top with blueberry sauce, and serve.

Note: You can also top with other fruits, nuts, or confectioner’s sugar.
