Ingredients

1/4 cups roasted almonds, chopped

1 large egg yolk

1/4 tsp almond extract

1/4 tsp vanilla extract

1 cup 00 flour

1/2 cup semolina flour

1/2 tsp fine sea salt

7 tbsp butter

1/3 cup sugar

3 tbsp brown sugar

Method

Preheat oven to 350 degrees.

Butter a 9-inch springform pan.

In a small bowl mix the egg yolk, almond extract, and vanilla extract.

In a large bowl combine the flours and salt.

Cut the butter into small pieces and add to the flour mixture and combine until it look like coarse meal.

Add the sugars and almonds and combine.

Add the egg mixture and knead until incorporated. The dough will be crumbly.

Place dough into the pan, and press lightly so the surface is slightly uneven.

Bake for 40 minutes or until golden brown.

Cool completely before serving.
