Ingredients

28 oz Italian whole peeled plum tomatoes, pureed

2 tbsp butter

1/4 cup olive oil

1 cup carrots, diced

1/2 cup celery, diced

1 cup onion, diced

2 cloves garlic, minced

2 tbsp parsley

Kosher salt and ground pepper

Method

Put the butter and olive oil in a large pan and cook over medium heat until it starts to foam.

Add the carrots, celery, onion, and garlic and cook until soft, 10 – 15 minutes.

Add the parsley and tomatoes and simmer on medium low for 45 minutes.

Salt and pepper to taste and serve with favorite pasta.
